WHere is a home-style take on a beverage from a new cocktail list. This is a large-volume prepared mix that's loaded full of tastes associated with Christmas time, rendering it excellent for your festive gathering. Save the extra cordial to use in breakfast cocktails, sweets, or to make another batch of this cocktail.

The Bikini Cocktail

Yields 10 servings

For the Clementine Syrup (makes 750ml)

300ml fresh clementine juice
200ml recently pressed lemon juice
500g granulated sugar

To make the Cocktail (produces 850ml, serving 10)

400ml good quality vodka
100ml dry gin
150ml peach liqueur
200ml clementine syrup (as made above)
Whole cranberries, as a garnish
Mandarin essential oil, for finishing

Method

Making the Citrus Syrup: Place the listed ingredients into a pot, bring to a light boil, stirring until the sugar dissolves. Next, turn off the burner and leave to cool down entirely. Pour into an sealable bottle, seal keeping it in the fridge, it will last for up to four weeks.

Preparing the Cocktail Base: Mix all the liquid ingredients into one sizeable container, let it rest for one hour, then filter it best through muslin, so it's fully clarified.

For serving: Add 85ml from the premix into a stirring glass containing ice, and agitate lightly for about 60 seconds to cool it down. Pour into a chilled martini glass or equivalent, garnish with a few cranberries and finish using a brief mist of mandarin oil over the drink.
